Chewy ginger snaps

Christmas just wouldn't be Christmas without some home made cookies.  These chewy, spicy, yummy cookies are one of my favourites and the first batch of the holiday season.  They are everything I want in a cookie, even though there isn't a morsel of chocolate to be found.

Crisp around the edges, soft and chewy in the middle, spicy with the addition of ground ginger, cinnamon and clove and chewy chunks of crystallized ginger to top off the spiciness, it's the perfect cookie.

I used the recipe from the side of a little can of crystallized ginger that I found at Williams-Sonoma.  They are made by a brand called The Ginger People and I can't get enough of these little spicy babies.


Sift dry ingredients

I creamed together the butter and sugar, then added the egg and molasses

MMM  ginger :)

Let the dough chill for 1 hr then roll into 1inch balls and roll in granulated sugar before baking
